They enhance the bigoli (thick spaghetti) and risotti, cooked with peas, asparagus, radishes. Pasta, beans and even cabbage soup are often found as a “first course”.
For example, “l’Occa in Onto”, is a goose accompanied by bigoli, salted and preserved in its own fat. Other main courses are stews, sometimes with goose breast, salami, tripe, or sausage. Horsemeat and mule meat dishes and cured meats are also eaten.
In pastry, let us mention the fugassa padovana (focaccia), the figassa (fig cake), the smegiassa (with raisins) and the sbrisolona.
A tradition is also linked to Sant’Antonio with the Pan del Santo, the Dolce del Santo, the Amarettoni and the Merletti.<\/p>\n
Map<\/h2>\n\t\t<figure\n\t\t\tclass=\"ssm-map\"\n\t\t\tdata-ssm-map-key=\"post-66187-map-e2864e7c830723\"\n\t\t\tdata-ssm-embed-url=\"https:\/\/www.bellitalie.org\/en\/?ssm_map_embed=eyJ2IjoxLCJwb3N0X2lkIjozNDEyNSwic291cmNlX3R5cGUiOiJwb3N0IiwibGFuZyI6ImVuIiwic2NvcGUiOiJwb3N0IiwiY29udGV4dCI6InBvc3QtMzQxMjUiLCJtYXBfa2V5IjoicG9zdC02NjE4Ny1tYXAtZTI4NjRlN2M4MzA3MjMiLCJvY2N1cnJlbmNlIjoxLCJhdHRzIjp7ImhlaWdodCI6IjQ1MHB4IiwibWF4X2NsdXN0ZXJfcmFkaXVzIjoiMTUiLCJwb3N0X2lkIjoiMTI4MDEiLCJ3aWR0aCI6IjEwMCUifX0&ssm_sig=98bd51cd203ac7855b9a9b562582c0a84f46febeffe713f11998cd260864c5e7\"\n\t\t\tdata-ssm-loading-label=\"Loading
